Techniques for brewing traditional yeast driven and non-traditional hazy ipa. We will explore recipe development considerations, process and techniques, as well raw material and yeast considerations when approaching the style.
We will discuss how Pinthouse has approached the category for it's flagship IPA Electric Jellyfish which utilizes a Kolsch yeast strain, along with more "traditional" approaches to the style with haze positive yeast strains like london III and Juice. There will be an overview of raw material considerations that includes hop selection as well as malt and grain selection for the style based on yeast choices. Listeners will also gain an understanding of our various dry hop techniques and approaches.

About the Presenters
Pinthouse Brewing
Joe Mohrfeld is a Co-founder of Pinthouse Pizza and Brewing in beautiful Austin, TX. Pinthouse opened its doors to their original brewpub in Oct. of 2012 and have grown to 4 locations in greater Austin over the past decade. Joe is currently the VP of Brewing Operations as well as VP of Sales and Distribution for the 4 locations, and oversees the 23,000bbls they produce for sale in those pubs and taproom, and across Pinthouse’s distribution footprint in Austin and San Antonio. The passion at Pinthouse is for hop forward Ales and Lagers, and they are known most for their “Austin Style” Hazy IPA, Electric Jellyfish. Joe’s goal as a brewer is, and has always been to take an agriculturally focused approach to beer and work closely with hop growers to source the highest quality hops and showcase them in beer.
Pinthouse Brewing
Joey Panarese was born and raised in the land of pork roll and Bruce Springsteen before making the move to Texas three years ago. His passion for brewing began in college and grew stronger when he started homebrewing. After graduating, he took the plunge into professional brewing as an Assistant Brewer at Victory Brewing in Pennsylvania.
After a few years, Joey moved closer to home and became a Brewer at Brooklyn Brewery in Williamsburg. His next stop was Two Roads Brewing in Connecticut, where he continued honing his craft. During his time at Two Roads, he married his college sweetheart, Melissa. With this new chapter unfolding, the couple decided to move to Austin to start their new life.
In Austin, Joey worked as a Brewer at Hi-Sign Brewing before joining Lazarus Brewing on East 6th, where he rose to the position of Head Brewer. He was thrilled to join the Pinthouse team, where he could learn from some of the industry's leading brewers. Now serving as Head Brewer at Pinthouse Ben White, Joey is committed to driving quality, innovation, and the fun atmosphere that Pinthouse is known for.
