Abstract
We finish 2018 with some of the best articles of the year. First, we have an interesting paper on brewing with the relatively new Kveik yeast strains from Norway, by Lars Garshol and Richard Preiss. "How to Brew with Kveik" explores what makes this yeast different from other ale and lager strains and details the practical procedures needed to incorporate it into your brewing portfolio. Horst Dornbusch, coauthor of the recent Master Brewers publication Dark Lagers: History, Mystery, Brewing Techniques, Recipes, has written an insightful look at the German Reinheitsgebot. We hear about it all the time, but what does it actually require? This article explores the history and revision of the German beer purity law and what it means for brewing today. John Paul Maye of Hopsteiner follows up his acclaimed 2018 Brewing Summit presentation "Hidden Secrets of the New England IPA" with a full article on the haze and hop profiles of New England IPA. What makes it taste the way it does? The answer is in the haze, at least in part. We include case study from a Master Brewers Short Course: "Hop Selection and Elimination of Hop Diseases." This case study describes many of the common diseases and how they afflict hops and affect hop selection. It provides a good overview for brewers who have the opportunity to select their hops for the coming year. There is also an excerpt from the new book Brewery Cleaning: Equipment, Procedures, and Troubleshooting by Richard Rench, published by the Master Brewers in January 2019.
