Abstract
Although the processes of malting and brewing date back millennia, most of the research that has allowed a greater understanding of the processes and better control over them has been delivered in the past three quarters of a century. The nature of these studies and their impact are described, including investigations into barley and malt, adjuncts, the brewhouse, yeast and fermentation, downstream processing, quality, health and wholesomeness, and environmental aspects.​
