Nitrogen Metabolism of Yeast

Abstract
Broad outline of the synthetic processes undertaken by yeast in utilizing a supply of nitrogen discusses the nature of the conversion of ammonia into protein. Emphasis is given to those reactions which are of particular significance in yeast growing under anaerobic, or more specifically, brewing conditions.
