Abstract
This review paper outlines a rational basis for the attack on the problem of installing or expanding a carbon dioxide plant. It shows that it is practical to compute, in advance, the amount of gas available from the fermentation cellars in order to properly size a system. It further shows that the size of the equipment need not be guessed at, but can be measured with adequate accuracy. Finally, it shows that methods exist whereby the use of carbon dioxide at any point in the brewing process can be estimated accurately and extended to any desired production rate.
