Effect of Malt Particle Size Distribution on Mashing and Lautering Performance.

Abstract
The effect of malt particle size distribution and lautering run-off rate on extract yield is determined. The rate of soluble solids extraction from malt is measured as a function of particle size. In large particles considerable diffusional resistance exists during mashing and lautering. It is shown that the decrease in extract yield which accompanies increasing particle size is primarily due to decrease in conversion yield during mashing.
