Abstract
A survey, including some hitherto unpublished data is presented on the following items: (1) Application of three differrent infusion-mashing systems featuring different mash-in temperatures and different mashing times. (2) Observations about the activities of these enzymes: peroxidases, phenolidases, lipases phosphatases, some endo and exopeptidases, beta glucanases and alpha and beta amylases. (3) Examples demonstrating the degradation of proteins and gums.
