The elements of safety - brewing operations

Abstract
The record of safety in the brewing industry, with few exceptions, cannot be judged as good. However, safety engineering is being used more and more to eliminate hazards, to prescribe and to enforce the use of personal protective equipment and to motivate personnel through the use of 'personal control' such as training programmes etc. Safety measurements including frequency and severity rates, doctors case vs. OSHA incidence rates are discussed. Recent brewing injury trends are reviewed and typical accidents listed. The elements of a total safety programme include creating safety attitudes, the makeup and function of labour/management safety committees, OSHA standards and requirements, accident investigation and safety training. Typical OSHA citations are listed.
