Abstract
This paper is a discussion of the theoretical principles involved in the separation of the liquid extract from the insoluble portion of the brewing mash. Each parameter affecting runoff rate and efficiency is examined independently, and the interaction of these parameters is analysed. The practical aspects of lautering are discussed including operating procedures to obtain optimum efficiency and throughput.
