Two-piece cans: some flavour problems caused by manufacturing materials or practices.
Hardwick, W.A.
Abstract
In the manufacture of two piece cans for the beer and beverage industry, certain materials and practices can cause off flavours when the cans are filled with beer or beverage. Materials employed for lubrication, materials and procedures for washing and chemically treating the cans, and the materials employed for coating the cans all can influence the flavour of the cans' contents. Cause of the off flavour is generally traces of residual material left on the inner surface of the cans. Origin of the off flavour materials and their interactivity with can coatings are discussed.
