Abstract
Using a feedback control loop the oxygen required by the wort is determined by a microprocessor fed by a signal from an oxygen analyser in the oxygenated wort line. Algorithms using both the ratio of the measured to the desired oxygen concentrations and the difference between them were used. Bubbles of undissolved gas produce unwanted noise in the sensor output which had to be averaged by the microprocessor over 20 sec periods. A back pressure regulator in the wort line simplifies control problems and also speeds the dissolution of oxygen.
