The application of a beta-glucanase with additional side activities in brewing.

Abstract
Three commercially available beta glucanases derived from Bacillus subtilis, Aspergillus niger and Trichoderma reesei were tested for their mashing qualities on laboratory scale using equal activity dosage. A simplified Poiseuille's equation was calculated to determine the relative bed resistance related to filtration rates in laboratory trials. Beta glucanase derived from Trichoderma reesei produced increased laboratory filtration rates and improved brewhouse efficiency. Pilot and industrial scale tests with this enzyme are reported.
