On-line control of ethanol and carbon dioxide in high gravity brewing.

Abstract
A sufficiently robust gas chromatograph was adapted for on-line monitoring of ethanol and carbon dioxide concentrations to control blending in high gravity brewing. A system of automated sampling and analysis, suitable CIP cleaning method and agent, calibration and feed back loop to regulating control were developed. Analysis results are fed into the blend control system. Standard deviations for lagers are 0.009, for malt liquor and ale 0.007, for carbon dioxide a 0.1 margin is acceptable.
