Design and testing of a pilot yeast aeration system.

Abstract
The development of a system for optimizing the physiological condition of brewers' yeast by aerating it before pitching, with a view to improving its fermentative performance, is described. The theory of the mass transfer of oxygen into a yeast suspension, on which the design of the system was based, is explained. A laboratory prototype of the system, consisting of a yeast tank, an air injector and measuring instruments, is described together with experiments in which the dissolved oxygen levels were measured and the response of the yeast to aeration was evaluated under varying conditions.
