Abstract
The development of a continuous wort acidification plant using lactic acid bacteria immobilized on DEAE cellulose, a pilot scale version of which is described in Monatsschr. Brauwiss., Oct. 1993, 46(10), 364-371, is described and operational data from its industrial trials at the Bavaria Brewery at Lieshout in the Netherlands, where it is used to supply acidified wort for alcohol free beer production, are presented.
