Abstract
The requirements of high gravity brewing with regard to equipment capacities, the processes of mashing, wort separation, wort boiling, boiled wort treatment, pitching, fermentation and maturation, filtration, the preparation of the blending liquor with which the beer is diluted to its sales gravity, and the treatment of the diluted beer are described together with the equipment used for blending liquor treatment and beer dilution. The question of whether to dilute before or after filtration is considered and economic aspects of the process are discussed. Under the economic conditions prevailing in the German brewing industry at the time of writing, the author estimates that the savings achieved should suffice to pay for the installation of the dilution system within about seven months.
