Abstract
Microwave cooking is common in almost every household these days and is widely used in the food processing industry. Microwave technology has been used for the first time for brewing purposes, for wort heating and boiling. The results of the first trials, carried out in a plant with a cast-out volume of 5 hl shows excellent technological and process results. Detailed analytical data as well as tasting results, show that this innovative technology has a future. The paper shows all the possible applications for the microwave technology in the brewing process, as well as the design details of how to integrate this technology in breweries, including the possibil-ity to achieve a sufficient energy balance by a simple energy recover system.

El cocinar con horno de microondas es com�n en casi todos los hogares hoy en d�a y es usado extensamente en la industria de proce-sado de alimentos. La tecnolog�a de microondas se ha usado por primera vez con el prop�sito de elaborar cerveza, del calentamiento del mosto y para hervir. Los resultados de las primeras pruebas, lle-vadas a cabo en una planta con un volumen de desecho de 5 hl mostraron resultados tecnol�gicos y de procesado excelentes. El documento muestra todas las posibles aplicaciones para la tec-nolog�a de microondas en el proceso de la elaboraci�n de la cerveza, as� como los detalles del dise�o de como integrar esta tecnolog�a en cervecer�as , incluyendo la posibilidad de alcanzar un balance de energ�a suficiente mediante un sistema simple de recuperaci�n de energ�a.
