Abstract
This article discusses the issues of protecting the quality of carbon dioxide (CO2) used for serving draft beers at the point of sale. There have been well publicized incidents of contaminated carbon dioxide entering the supply chain and affecting the quality of carbonated beverages. These contaminants may affect taste, odor, the appearance of foam head, and the presentation of the beer, or they may be controlled by regulation to prevent health issues. An in-line purifier has been designed to act as a safeguard against possible CO2 contaminants and maintain the qualities of the beer as the brewer intended.

Este art�culo discute los problemas relacionados con la protecci�n de la calidad del anh�drido carb�nico (CO2) usado para servir la cerveza de sif�n. Han habido incidentes de gas carb�nico contaminado entrando en la cadena de suministro, afectando la calidad de bebidas carbonatadas. Estos contaminantes pueden afectar el sabor, olor y espuma; tambi�n existe la posibilidad que estos contaminantes sean regulados por entidades gubernamentales para evitar problemas de salud. Se ha dise�ado un purificador en l�nea para resguardar contra los posibles contaminantes de CO2 y mantener la calidad de la cerveza tal como el cervecero lo elabor�.
