Abstract
In 1988, the Anchor Brewing Company in San Francisco brewed a �Ninkasi� to commemorate the Institute of Brewing Studies national conference. The author did research into the ancient recipe. A context and a description of the historical background of the brew is presented, followed by a presentation of a bench-scale recipe and protocols for making a style we can describe as �Ninkasi�.

La Anchor Brewing Company en San Francisco elabor� una cerveza �Ninkasi� en 1988 para conmemorar la conferencia nacional del �Institute of Brewing Studies�. El autor investig� la receta antigua de esta cerveza. Se presenta el contexto y una descripci�n del fondo hist�rico de esta cerveza, incluyendo una receta a escala piloto y el protocolo para elaborar un estilo de cerveza que se puede denominar �Ninkasi�.
