Monitoring and Controlling Microbial Contamination in the Beer Filling Area

Abstract
Microbial contamination in the beer filling area originates from several sources, including beer spillage, environmental soils (e.g., fork trucks, personnel, dust, and grease), air currents, and floor drains. Microbial contaminants can include nonspoilage and spoilage bacteria and yeast and mold. Microbial contamination can be unsightly (e.g., slime buildup on equipment) and can create safety hazards, such as slippery floors. Microbial contamination can cause off-odors and, in the worst cases, can contaminate beer during the filling process. This paper reviews the sources of microbial contamination in the beer filling area; the test methods for microbial sampling, including air monitoring and ATP swabs; and the remedial measures, including automatic cleaning of processing equipment and conveyors and drain treatment.

S�ntesis
La contaminaci�n microbiol�gica en el �rea de envasado de cerveza se da por diferentes causas, como derrame de cerveza, suciedad del entorno (montacargas, personal, polvo y grasa), corrientes de aire y alcantarillas. Los contaminantes microbianas incluyen bacterias (tanto da�inas como no da�inas a cerveza), levadura y mohos. Adem�s de dar un aspecto feo (babosidades en las m�quinas), pueden tambi�n ser causas de condiciones inseguras (pisos resbaladizos). La contaminaci�n puede causar olores desagradables y, en caso extremo, puede contaminar la cerveza siendo envasada. Esta presentaci�n revisa las fuentes de contaminaciones microbiol�gicas en el �rea de envasado, los m�todos para el muestreo (incluyendo el control del aire e hisopos ATP) y medidas de correcci�n (limpieza autom�tica del equipo y cadenas transportadoras, y tratamiento de alcantarillas).
