Abstract
Weight analysis is a simple, fast, and inexpensive test suitable for
monitoring the course of laboratory-scale fermentations. Compared with commonly
used methods, weight analysis does not require any sampling. It can be used to
depict the shape of the fermentation curve in various research and development
projects concerning yeast vitality, fermentation conditions, wort composition,
and others. It also can be a useful tool for solving problems with full-scale
fermentations through model laboratory fermentations.

S�ntesis
El eval�o del peso es un m�todo sencillo, r�pido y poco costoso para
monitorear el desarrollo de fermentaciones a escala de laboratorio. A diferencia
de otros m�todos, no requiere que se extraiga una muestra. Puede ser utilizado
para determinar la curva de la fermentaci�n en proyectos de investigaci�n y
desarrollo relacionados con la vitalidad de la levadura, condiciones de
fermentaci�n, composici�n del mosto, etc. Tambi�n puede usarse para resolver
problemas de escala industrial mediante fermentaciones a nivel de laboratorio.
