Webinar Summary

How is a beer recipe constructed? How do flavor groups interact with beer styles? In this session, we will explore the fundamentals of envisioning a new beer of any style and how to make it a reality. We will use simple brewer's math to calculate the original extract and final extract necessary to produce the target percent alcohol and then how to figure out the malt and hop bills to achieve other key beer specifications like extract, color, and bitterness units. Along with raw materials we will also consider the procedural aspects of the recipe including the brewhouse operations, fermentation/maturation, and the finishing recipes. The total package of raw materials and procedural techniques will deliver the envisioned beer recipe.

By the end of this webinar you should be able to understand how a beer recipe for any style is envisioned and constructed, including the following elements:

  • Volumes to use
  • How the brewhouse operations would be performed
  • The type and method of fermentation
  • Maturation to use

Karl Ockert

Karl Ockert graduated from UC Davis with a BSc in Fermentation Science in 1983 and promptly helped design, build and operate the BridgePort Brewing Company, Oregon’s first craft brewery. During his forty plus year career he has worked in breweries of all sizes from brewpubs to AB-Newark and continued to learn and hone his skills in all aspects of brewing along the way. In 2024 Karl published The Craft Brewer’s Guide to Best Practices (Volumes 1-4) through the MBAA and his webinar presentation will be based on material about recipe formulation from Volume 2: Raw Materials, Wort Production, and Fermentation, Chapter 3 The Brewhouse: Sweet Wort Production.
