10. The benefits of using a persulfonated oleic acid solution for cleaning bright beer tanks

Breweries are always looking for ways to increase their productivity and reduce downtime; decreasing cleaning time can be one way to improve that productivity—however, it is important that cleaning is done effectively to ensure beer quality. This presentation will discuss the use of a mixed peracid, based on persulfonated oleic acid, to clean bright beer tanks and the synergistic effects of using such a solution. It will outline the potential operational savings (water, energy, and time), safety benefits, cleaning benefits (beer stone removal), and environmental benefits of using such a product as part of a CIP regimen as well as share real results from a brewery implementing this mixed peracid solution.

Matt Bilski has 10 years of experience and is currently a principal chemist in Ecolab Inc.’s Beverage and Brewery Group. His responsibilities include the development and commercialization of new and innovative cleaning, sanitizing, and lubrication products for the brewing industry. He has been with Ecolab since 2007 and has contributed to numerous business segments within the corporation. Matt is a regular attendee at meetings and a member of the Master Brewers Association of the Americas District St. Paul–Minneapolis. He received his bachelor's degree in biology from Saint Mary’s University of Minnesota and his master’s degree in management of technology from the University of Minnesota. He holds one patent for his work.
