AbstractIsinglass has long been used to clarify cask beers without the need for filtration. It still finds use today in the brewing industry to help produce cask beers and remove yeast after primary fermentation, as well as in a modern filter cellar. The unique shape of isinglass among collagen gives it particularly useful characteristics as an aid to yeast removal along with foam-positive attributes.
