Abstract
It is becoming clear that local, small-scale hop production is likely here to stay. It is critical for brewers to understand key elements in the production of small-scale hops to maximize the value of this potentially important product. This paper outlines a proposed “know the farmer, know the farm, know the hops” approach to allow brewers to, at a minimum, protect their business, but at a maximum, generate sustainable and valuable local relationships. This approach will serve to help brewers brew outstanding beer with high-quality local hops.
